Château d'Arche is located at the very heart of a 50 hectare vineyard on the small hills surrounding the village of Sauternes. Its unique location allows it to benefit from a particularly favourable climate.

The morning mists dispersed by the sun enable the development of Botrytis Cinerea, a micro-organism essential to the making of outstanding Sauternes wines. The vineyard is planted on a varety of soils which allow for the growth of grapes with specific gustative qualities : strength from gravel, aromas from the clay and subtlety from the silt. The North/South axis of the vineyard ensures the grapes a maximum amount of sunshine throughout the day.

  • By the end of september to the end of october, selective picking to select only botrytised grapes (4 à 5 pickings).
  • Pressing With vertical wine-press dating from 1935
  • Fermenting Up to 1 month.
  • Maturing  18 months in barrels 30% new.

  • Special attention to avoid new fermentations
  • The Sauternes is particularly sensitive to the new fermentations.
  • After the main fermentation, during its breeding, a major importance is carried to the destruction of yeasts.
  • Mutage :destruction of yeasts by the cold and sulphur.
  • Racking : after being emptied of their content, each barrels is carrefully cleaned during nearly 15 minutes ( water under pressure, vapor, drying ). Then, the wine return to the clean barrels.
  • Topping off :each week, the barrels are filled up to compensate for loss due to evaporation which allow for the development of yeasts.
